Olive trees have been a part of

hope. ETRURIA olives are picked laboriously by hand (this
methond provides fruit for the finest extra virgin olive
oil). Since quality decreases while acid content of the
oil increases after 24 hours, olives need to be
cold-pressed as soon as possible. Olives Varieties:
Moraiolo produces a typically fruity oil with an intense
flavor of asparagus, slightly bitter and sharp
after-taste. Frantoio is a variety that produce a very
fruity oil with flavor of artichockes and fresh
herbs. Leccino is extremely mild, golden yellow oil with
a delicate almond flavor. The art of oil production includes choosing the correct varieties and quantity to
blend and produce a balanced oil.
